One of the oldest breeds of cattle in the world, Highlands originated in the West of Scotland. In the UK, herds of Highland cattle are known as “folds”. Their non-selective grazing and foraging habits are widely recognised as enhancing the flavour of the beef. They also keep the marginal areas of the farm under control, promoting conservation and bio-diversity. The Goodtrees fold was founded in 2014 and is now 45-strong.
Slow-to-mature traditional Highland beef is lean, tender and succulent. Due to the big shaggy coat which keeps it warm in winter its naturally very low in fat whilst being rich in protein and iron. A healthy choice.
